Aviano showed up in Denver in February of 2006, and from the beginning, they have put a strong focus on quality coffee. They have well-trained baristas and seem to focus on the art and skill of preparing and serving coffee more so than any other shop I’ve seen in the Denver area.

There is a nice small area upstairs w/a couch and some chairs to hang out in, along with plenty of table seating downstairs.

I also had a cappuccino there and I would agree with the review at CoffeeCrush that this is some of the best coffee around! Glad to see another late night spot opening up. Post your reviews below!

    Went to Aviano one day when I was early for an appointment right by it. The people working did not ridicule me when I asked why there wasn't a menu, but were very kind and explained it, their coffee, and the shop. I got a cappuccino, which was fantastic, and a blueberry muffin, also excellent. The atmosphere is nice, and the space is beautiful. Thus far, Aviano is the only place I've found that doesn't have drinks that taste burnt. I recommend it to everyone, probably the best place in Denver.
    Oh ya, and I adore the staff, really nice people always.

    I've been going to to your shop for 2 years now, and I've loved every drink. In fact, the only time I've had drinks on par with yours, is when I go to Intelligentsia in LA.

    This is by far the best coffee house in Denver. I've never had a problem with my drinks. The last person probably grabbed a drink that was supposed to go to someone else.

    Great coffee. That was my opinion till this week. I was super disappointed when I went in to get a coffee Mocha and left with a latte – didn't even realize till I was back in my car. The barista and other staff seemed preoccupied with something other than making coffee.

    I am in the same industry as you, and here is some free advice. Stop defending yourself and over-explaining something every time someone posts something about your cafe online. You are only working yourself up, and giving people fodder to fire back at you with. There are more important things that you could be worrying about, not answering peoples gripes and such, they will do that regardless of what you say or do, just let it go.

  12. We’re way too busy to spend time doing our own posts. The awards, along with the drinks we serve speak volumes.

    We don’t claim to be any better than our colleagues at other coffee shops. We have great relationships with other independents who share the same passion for coffee that we do, and we encourage readers of this blog to support them as well.

    You are absolutely right – you are thinking about the customer’s experience and protecting the quality of the product you serve. Your attention to and passion for the quality and preparation of your espresso goes way beyond and we love you for it!

    Before we serve any drink, we make quality our primary objective. I don’t believe that there is anything “pretentious” about that. The truth of the matter is that many of our customers come to us for that reason, and each of them appreciates our dedication to excellence and detail.

    The reality is that espresso is either a 1 or 2 ounce drink that should be enjoyed at the shop, at the bar. If prepared in the correct manner, espresso should be extracted into a small 3 ounce porcelain cup that has been pre-heated to a temperature that is consistent with the espresso upon extraction. Our baristas have spent a great deal of time mastering the trade, and in order to maintain the integrity of their work and the espresso itself, we have chosen to serve these drinks in a manner that is consistent with traditional quality espresso preparation standards and methods. That is our choice.

    This practice is not designed or meant to be offensive or pretentious. Quite the contrary, it is designed to leave our customer with a feeling satisfaction and contentment in our efforts to produce the highest quality drinks available for their hard-earned dollars. I don’t believe that there are enough coffee houses or restaurants that care about this.

  16. I went to this place today and had a fine cap, but on my way out I attempted to order an espresso to go. I was told they wouldn’t give me one unless I put milk or sugar in it. The reasoning was that if I take it with me and don’t drink it quick enough it won’t be good and I would blame the shop.

    I find this policy to be extremely pretentious, and insulting to me as a consumer. Apparently I’m too stupid to realize that if I let my drink go stale it won’t be good. Perhaps the ownership should stop treating its customers like babies and should just give us what we ask for. I’m still not clear on why adding sugar to my drink would avoid this bizarre concern, but I didn’t try to reason with the barista. I don’t think I’ll be back, which is too bad given that it’s hard to get a good shot in Denver.

  20. Aviano definitely has some great coffee, but I’m surprised that almost no one talks about the fact that they are serve Intelligentsia coffee. This is a big deal and says a lot about their commitment to good coffee even if they aren’t quite as good as the original.     Actually, they have two new girls. As with any new job, new people generally don’t know much about that particular job until they have been working for a short while, and/or until they are fully trained.

    I DO know however, that no new person, even baristas, can ever get on the espresso machine without having been fully trained. In fact, before anyone can make espresso drinks at Aviano, they must spend a least three months being trained on the espresso machine, and they must make at least one hundred perfect drinks before they are allowed to make drinks for customers.

    This my friend, is why your capp was still good. Because the person making it was skilled in the art. I have seen a lot of people working behind the counter at Aviano, but I have seen a mere few making drinks.

    They have a new girl. She’s only working the register for now that I can tell. If she does move to barista I hope they train her very well. She doesn’t seem very knowledgable about it – I asked a very basic question and she was clueless. Cap still excellent as always btw!

    Clearly the reason that this place gets so much press is that they are consistently good – really good. Actually, they’re the best!!!!

    Walk in the door and you’ll see awards from 5280, Rocky Mountain News and Westword. They have had several articles written about them, and the most recent one was published on the website: “www.thisweekindenver.com”

    Additionally, Katie Couric made a visit to this shop on her national tour, and they’ve received accolades from the U.S. House of Representatives – twice. Even the master of this site, DCB would more than likely concur.

    In order for them to stay at the top, they spend a lot of time and money training their baristas. In fact, they won’t let anyone get on the machine and make a drink until they are consistently good – all the time. If ever there is a question, or even the slightest doubt to any particular drinks perfection, the barista on shift won’t even for a second hesitate to pour the drink down the drain and start over. These people are serious. They have turned a commuter business into a destination point for coffee lovers, and their reputation proves that.

    I highly recommend this place. If you have even the smallest of doubts about how good they really are, go in and try it for yourselves.

    I’m going to post this as ‘Anonymous’ because I still go into Aviano semi-regularly and don’t feel like dealing with any awkwardness.

    I also subscribe to ‘This Week in Denver’ and was pretty excited to see Aviano Coffee in there as this week’s ‘foodie review’, but, sadly, the review is about one year too late.

    When my husband and I started going to Aviano last Spring/Summer there were two main baristas, Doug and the tall guy with the Buddhist name (which I can’t remember for the life of me). We always got double caps and they were always amazing. Slowly a couple more baristas were added to the mix and, outside the two I mentioned above, quality/consistency became a huge issue. The owner’s wife doesn’t look like she is enjoying herself at all and it comes through in her service and, more importantly, drinks (I’ll deal with rude service if the drink is good).

    It’s a bad sign when I change my drink order depending on who is the barista. Since Doug hasn’t made mine lately and haven’t even seen Buddhist name-guy in a while (does he still work there?), it’s become a little difficult to get motivated to drive across town to Aviano. It’s been a sad state of affairs in Aviano as of late, for me.

    Was in town doing some rep work for Denver’s “Sniagrab” and gave myself a proper morning wakeup by visiting Aviano. Thanks to the folks there for opening up extra early. You were a savoir for a lot of us!!!

    I don’t remember the names exactly, but Saturday morning’s handcrafted/organic Chai was great…as was the Americano that afternoon…only to be surpassed by my artsy vanilla latte that I would order the next morning.

    And the barista working the bar? Ridiculous…delicious drinks, friendly and talkative even at 6 am, but you should have seen my female co-workers. Crush magnet of legendary proportions! ;)

    See you next year…unless you open a shop in the mountains. (hint, hint)

    FINALLY….The “Big Man” from upstairs has answered my prayers!!!!… (Aviano was created)!! It’s nice to finally go into a coffee shop that actually WELCOMES you, instead of trying to take your money and push you out the door. The atmosphere is AWESOME…extremely COMFY and CLEAN! They actually serve you in real glassware! Aviano has the best espresso I have ever tasted!!! When I think of Aviano, only one word comes to mind….EXCEPTIONAL!!!     I didn’t even know this shop was here until today, and what an amazing place.

    I’m from Chicago, and if you’re a coffee drinker in Chicago, then you know Intelligentsia. Aviano serves Intelligentsia, including their Black Cat Espresso, and they serve it as good as Intelligentsia themselves. They even serve the Cortado, which is what I had today. If you like and appreciate GOOD ESPRESSO, then you must come and try this place.

    I went to Aviano Coffee yesterday morning and left very impressed by the whole experience….

    The space was gorgeous! I don’t really care if it was built out, prefab or whatever because, in the end, it looks great and was comfortable. Although it certainly looks like the owner put in many hours of work by the pictures on MySpace. A shame upstairs was closed…only temporary is what I was told.

    The employees and (I’m assuming) a regular customer were giving the barista a bit of a hard time about a picture of his, that accompanied a story on Aviano, in the paper. All in good fun. It’s always nice to walk into a shop and see this kind of interaction! None of the snotty, “i’m young and rich’ Beauvallon attitude that I feared was present…

    But, the bottom line, when it was all said and done…my latte was marvelous. Easily on par with the shops that I loved in Vancouver. Design on top, nice velvety milk and strong, but smooth espresso.

    I’ll go back for sure!

  40. We would like to thank all of you for your business. Recently, business has been great. As many of you already know, our punch cards allow you to receive one free drink after you purchase eight. This works out to be a considerable discount (somewhere in the region of 14% to 21%, depending on the drinks you order), while most other shops who offer punch cards require you to buy 10 drinks, and then limit the dollar amount of your free drink.

    The increase in business also means that there has been an increase in our sale of bulk coffee. Unfortunately, due to the premium price we pay for coffee, we do not offer a punch card for bulk coffee, nor do we punch any drink cards. Punches on your drink card are for drinks we prepare for you.

    If you buy our bulk coffee, you’re getting coffee with a point rating of 93 and above, as well as direct trade. Intelligentsia Direct Trade pays their coffee farmers 25% more than the Fair Trade price, and encourages the farmers to produce quality, not just quantity. If you have questions about this, come into our store and we’ll be happy to explain the difference between Fair Trade and Direct Trade, and why Direct Trade is MUCH better.

    Since Westword awarded Doug “Best Barista,” I have gone in twice to have him make me a drink. Unfortunately, he was not there for either occasion.

    The barista who made my drinks however, did a supreme job on my espresso and made my experience a pleasurable one. I will continue to frequent this establishment until I find a place that does better, which, based on several years of nomadic gypsy style coffee-shop wondering, is unlikely.

    Went into Aviano for the first time last Friday. I heard great things about their coffee and just had to see if the hype was true. When I got there around 11am, the line was too long and I didn’t have time to wait. Oh well, I’ll try again some other day.

    Great coffee & nice place! Just wanted to mention that their hours are different now. They close at around 8pm and open later in the mornings. Not sure on the exact hours, or if the shorter hours are temporary.

  46. No doubt serving intelligentsia coffee, Chicago’s premier roaster and latte-art-house is refreshing for a new Denver coffee spot. The espresso is creamy and aromatic. But don’t be fooled, this is not intelligentsia, and the baristas are no USBC savants. If you like Rosetta lattes the fist thing you should do is leave the state. Barring that possibility, go to
    Amante in Boulder (even if their espresso tastes like it poured out of a sewage bilge). But if you’re in Denver and need a no-complaints espresso drink this is the best option. The only reason I mention presentation is because the lattes are too fluffy and the manual machines leave too much to human inexperience- the pull was awfully long the few times I’ve been in. Exceptional presentation usually ensures exceptional taste, unless something else sucks- like at Amante. Who knows what the reviewers at that darling, provincial rag the wasteword were thinking.
    In terms of atmosphere expect the same nouveau-Denver, pre-fab, expansion décor. I’m surprised the baristas don’t wear scrubs. I guess that’s what you get when you put your business in a 15 story, ersatz Parisian apartment building with spray on patina.
    But just in case this seems like a bad review, it’s not. It’s as good a latte as you’ll get in Denver- but what help is it to write a blip full of superlatives like, EXCELLENT, EXCEPTIONAL, GREAT? It’s not exceptional, it’s a pleasant and FANTASTICALLY average.

    This place has loads of personality. I had a great time just watching the staff interact with each other and their customers. HIGHLY RECOMMENDED! In addition to their drinks, the layout and design of the place leaves a lasting impression, and the art on the walls is spectacular. Like the old saying, “A thing of beauty is a joy forever.” I will certainly be a regular customer here.

    Hey there coffee drinkers…

    Went into Aviano for the first time last night after dinner and had a surprisingly good cup of ‘Mocha Java’ coffee and biscotti. Surprising because I’m usually not a fan of this most legendary and historic coffee…this one hit the spot, though.

    The real reason I’m posting, however, is that the young man behind the counter made the customer after me a delicious looking Mexican chocolate mocha. He said they had just started making these drinks with Mexican chocolate, but both the pride he took in making the drink and the finished product were impressive.

    I’m a Boulderite, but I’ll be getting a one of those new mocha’s on my next visit to Denver.

    Coming from Boulder, I was greatly relieved to find Aviano’s! They are in a class all their own in Denver, no contest. After trying numerous shops in Denver, I was starting to believe there wasn’t any real espresso. Boulder has several, and I didn’t know how nice we have it until I tried to satisfy my taste for good espresso in Denver.

    Thank god for Aviano!

    I just reread these after the comments Aviano left regarding the be drinks post and it is so clear that whenever anyone says one review that is not favorable regarding this place, another pops up disputing. And then puts down whatever other coffeeshop is mentioned. I have been to probably al coffee shops the Denver Metro area has to offer and Aviano hardly made ‘the best drink’ I ever had. Wasn’t the worst either. That I had at a coffee shop in five points that has since closed. Great space but horribly burnt espresso that tasted like it had sat in the shot glass before getting put in my drink for hours.

    My hunt for the BEST cappuccino continues. Cheers to all that take the leap to open locally owned shops. That alone is a great thing.

  53. “Best Coffee Shop in Denver” proclaims the insert in the Rocky Mtn News. Elegant caps & lattes, yes! But what really surprises me, is the thoughtful care they give to pouring a simple cup of their house brew for my husband.
    A small menu board on the counter, however, would be appreciated.

    I stopped here on a Saturday afternoon just to try the coffee. I must say, it was an EXCELLENT latte. One of the best I’ve ever had. The baristo was friendly, helpful and concerned about making the perfect and most beautiful latte. I would love for there to be a customize coffee menu.

    We have been going to Aviano since they opened. The service we receive is always warm and welcoming. The owner Doug and his wife Saadia, along with Koan (another great barista) are the nicest, hardest working people we have met, and the coffee they prepare and serve is among the best we have ever had. This place is remarkable. We are fascinated by their ability to incorporate art into the drinks they serve, and they can be assured that we will be loyal customers for as long as they do what they do. The person(s) who wrote that last post is/are jerks and cowards. If you have a problem, quit hiding behind an anonymous post and just take it to Doug, Saadia and/or Koan. If you can’t do that, you should just quit going there. Doug, Saadia and Koan, we love you guys.

    One word. Go. This place is amazing, I was visiting Denver and stopped by, and now I’m almost tempted to stay simply because of Aviano. I thought I knew what a cappuccino was until I tasted one from here, that’s when I realized that all my previous cappuccino’s had been pale imitations, faint shadows, of what a cappuccino is. Each sip was like an orgasm for my taste buds. And don’t get me started on their fruit tart, each bite a piece of bliss. It definitely gives meaning to the term ‘sinfully good’ as something so delicious and tantalizing has to come from the devil’s bakery.

    And I haven’t even mentioned the ambiance, comfy chairs, especially upstairs where relaxing sofas await. The vibe is relaxed and inviting. Everything shows attention to detail and a passion for providing a beautiful space, from the color and pattern of the walls, to the paintings hanging above, to the pattern on the rug. Great friendly service, amazing coffee, and wonderful vibe, what more could you ask for.

    So correction, two words. Go Now.

    I too sought out Aviano because of what I’ve read on this site. The Barista however, ASKED ME how I liked my cappuccino, either wet or dry. He also said that this would be the best cap I ever had. He was right. Unlike the other customer, my cappuccino was perfect: clear separation of the froth. The froth was not like that at Scooter Joes (like marangue), but had the proper characteristics of a proper cap, in which the froth gently flowed back into place after being moved with a spoon. Also, the space is beautiful, warm and inviting.

    I’ve also been to scooter joes on two occasions. I can’t say that the experience was memorable in any way. The coffee was bitter, and the service was very matter-of-fact. They in no way engaged me as a customer, and frankly, I don’t think they really knew what they were doing when it came to making espresso. I would urge anyone who reads this blog to try both and then judge for themselves.

    About a month back I was recommended Aviano Coffee by a coworker who always raved about their latte’s and cappuccino’s. I’ve since tried to incorporate trips to Aviano into my schedule as often as possible (not often enough, sadly) and have been blown away every single time.

    I have had three different baristas make my drinks and was impressed by all three. Their service, personality and drinks are always fantastic…consistency is a thing many Denver shops lack.

    I sought out Aviano because of the comments on this site. I absolutely love the space, the Barista was friendly and obviousley took great pride in his drink making. We ordered one latte and one cap. I asked for my cap on the dry side and mentioned that it was reaally difficult to get a properly made cappuccino in this town. He boasted that it would be the best cap I ever had. It was tasty, but no where near properly made. As a certified Barista myslef, I was dissapointed to yet again receive a latte being passed off as a cappuccino ~ latte art and all. There was no separation of foam and milk. Again, it was velvety delicious, but a latte nonetheless.

    Sorry to decent, but we went down the street to Scooter Joes directly afterwards where we had good, if not overly friendly service, great atmosphere, a great sandwhich AND a properly made cappuccino!

  60. Just wanted to let everyone know that we are serving Iced Toddy’s. Smooth like tea, low acid, and taste like coffee smells when being brewed.

  61. Damn good coffee, some amazing white teas and pastries. Real pastries. I wish I lived closer, or maybe not. This place is going to be hazardous to my attempt at losing weight.

  62. I stopped by Aviano this afternoon, expecting the same thing you always find in Denver’s coffee shops . . . mediocrity. Wow! What a surprise. This is a great place! The coffee rivals anything I’ve tasted in the states, in fact I can’t think where I’ve had a better capuccino. The place is spotless and the people there were friendly and happy. Also, a big seller for me is their punch card and you can bet I’ll be a frequent visitor. Hopefully, Aviano’s won’t lose it’s charm and attention to detail. Loved Rich the Barista!

  63. I just swung by Aviano tonight (Apr 8, 2006), and it looks like they are no longer open 24 hours on the weekend. :( According to the door, their new hours are: M-Th 6am-10pm, F-Sa 6am-2am, Su 7am-4pm

    My Husband and I moved to Denver from O/S several yrs ago, and have always lamented the lack of a good coffee/pastry house, where you can get a latte like a true euro latte. Well we stumbled apon this delicious little place yesterday, and I am their new number 1 fan. Lovely cofee, made with PRIDE! I will be back!

    I’ve been to Aviano Coffee several times and keep going back.WHAT A GREAT PLACE AND GREAT COFFEE! Absolutely the best capuccino in Denver!

    I agree wholeheartedly with these comments. This is one fantastic coffeeshop, and Denver’s lucky to have this one. BTW, check out the bathrooms: I doubt you’ll see nicer facilities anywhere. They rival the Cherry Creek Mall.

    It’s possible that there are other coffee houses in Denver that offer coffee on par to the drinks they serve at Aviano Coffee, but I have not found them. I have lived in Denver for 13 years and been to A LOT of coffee shops, but this is far and away the best. I’ve been to Italy twice (including visiting Aviano, the small town the shop is named for) and after each visit I have despaired over the quality of coffee here vs the way they do it there. Those days are over. The drinks at Aviano Coffee are as good or better than any that I had in Europe…and it’s much easier to get to! if coffee was the only issue, I would never need to go to Europe again. Bravo, Aviano Coffee!!!

    I went in again last night and had a capuccino. I’ve mentioned several times on this blog the fact I am not a coffee expert or connoisseur by any means.

    HOWEVER, I know a good drink when I have one, and I have never had a capuccino as good as the one that I had at Aviano!! Good stuff!
